Paleo Caribbean Turkey Lettuce Wraps
As the weather tries to get itself together here in SoCal, I am dreaming of hot summer days and cool summer nights. When the weather turns warmer I always find myself making up all sorts of fresh produce salsas and mangoes are always a key ingredient among them. I seriously can never get enough of mangoes! One day last summer I cooked up this batch of lettuce wraps and it was such a hit that I decided it must be shared…. a year later but shared nonetheless LOL!
Ingredients Needed
1/3 Cup Diced jicama (Increase to 1/2 Cup For Vegan)
1/4 Cup Coconut Aminos
2 Garlic Cloves Minced
1/2 Shallot Minced
1/4 Cup Chopped Cilantro
1 Mango Diced
1 Head Of Lettuce
1 Lb Ground Turkey
2 Tsp Honey
For Vegan Recipe Or As Desired: 1 Avocado Pitted and Diced
Caribbean Lettuce Wraps Recipe
Begin by dicing and chopping all of your fresh produce - mango, cilantro, garlic, shallot, jicama, avocado. Once all produce is chopped combine all ingredients in a bowl and gently mix together.
If you are using meat, now is the time to brown and cook your ground turkey. When it is sufficiently cooked add this to your bowl of ingredients.
Add your coconut aminos and honey to the bowl and stir gently to combine all ingredients.
Now just wash and dry your lettuce leaves, serve, and ENJOY this tasty dish!
